Frosting Ingredients: 2 cups pureed sweet potato 1 cup chocolate chips (I used unsweetened to keep it refined sugar free, but you can use your preference) Method: Steam sweet potatoes (with skin) until soft, then puree as many as needed to make 2 cups of puree. While the puree is still hot, add 1 cup of chocolate chips (no need to melt them if the puree is hot. This will automatically melt the chips while blending!). Blend until chocolate is fully melte and incorporated. *Notes: If you don't have a high speed / high power blender, you may want to melt the chocolate prior to blending and you will need to wait until the sweet potatoes are cooled before blending.
