Perfect way to kick off the weekend! Pork Belly Nachos with a smoked cheese sauce on the Weber Smokefire For the pork belly burnt ends - Cut the rindless pork belly into 1.5” cubes Season with your favourite bbq rub I used @sucklebuster ‘sugar daddy’ Place onto a wire rack this makes rotation & removal from the smoker / bbq easier. Smoke or cook indirect on the BBQ / oven for 2hrs at 140°c until a bark has formed on the exterior of the pork. Add all the belly bites to a pan, sprinkle with brown sugar, butter slices, and add a drizzle of apple juice. Cover with foil and return to the smoker for 1hr. Remove and add the BBQ sauce. Toss the belly bites in the sauce then recover and return to the BBQ / Oven for a further hour. For the cheese sauce - Heat 250ml of double cream Add in the dried spices: 1/2 tsp chilli powder 1/4 tsp garlic powder 1/4 tsp cayenne pepper 1 tbsp paprika 1 tsp cornflower Pinch salt Pinch of pepper 100g of cheddar we used @dromonamakesit 100g of Red Leicester cheese 125ml of milk - add a little at a time until the sauce is the consistency you desire. Place the nachos into a pan, add the pork belly, top with the cheese sauce. Garnish with simple fresh salsa- chopped white onion, tomatoes in equal portions, coriander to taste & squeeze of lime. Serve some guacamole on the side.
