The best GLUTEN FREE MINCE PIES!! It’s time to make your mince pies!! I’ve been making my own mince pies for many years now. Truth be told, I’m not so keen on the ones you can buy in the shops. Homemade pies are out of this world- crunchy pastry encasing warm sweet spiced sticky Christmassy goodness. The crispy pastry really is a game changer! I’ve recently had to adjust my recipe to cater for the gluten free members of my family and so I thought I’d share it with you here. It’s inspired by one of Becky Excell’s fabulous recipes. This recipe will yield approximately 18 small mince pies. You can easily multiply the recipe to make a larger batch! Ingredients: 300g plain gluten free flour 1.5 tsp xanthan gum 35g golden caster sugar 2 clementines (finely zested) 145g unsalted butter (cold), diced 2 large eggs + 1 small/medium egg 410g jar of shop-bought mincemeat Optional - 2 tbsp demerara sugar Method: 1. Combine the flour and xanthan gum in a large bowl. Add the cold diced butter and rub until the mixture resembles fine bread crumbs. (I like to use a pastry blender as this helps to avoid warming the mixture too much between warm fingers!) 2. Add the golden caster sugar and the clementine zest and combine. 3. Beat the 2 large eggs in a separate bowl and gradually add to the flour mixture stirring between additions. Your mixture will slowly start to come together as you continue to add the eggs. You want to keep stirring until your dough comes together. 4. I like to get my hands in at the end stage to help bring the dough together. Don’t knead too much. Just quickly bring it together into a ball shape and then flatten slightly before wrapping it up and putting it in the fridge for at least half an hour or so. Once the dough is cooled, you can move on to the next step. (I make my dough the night before I make my mince pies. It makes the whole process more manageable! I leave the dough in the fridge overnight and then take it out around 30-40 minutes before I want to make my pies to allow it to warm up a little bit. The dough will be too tough to roll out easily if you try and work with it after it’s been cooled for a long time.) 5. When you’re ready to make your mince pies, preheat your oven to 180C fan. Lightly grease a shallow 12 hole muffin/fairy cake/mince pie tin with butter. (You can use a standard muffin tin but the cutter measurements will need to be larger than the ones I’ll be using below.) 6. Next it’s time to roll out your pastry. I like to do this in between two sheets of floured parchment paper for easier handling. Roll out your pastry to roughly 3mm thick and cut out 12 fluted circles using an 8cm round fluted cutter (these will be your bases) and then cut out 12 fluted circles using a 7cm round fluted cutter (these will be your lids). Gather your offcuts and re-roll, dusting with flour as you go to avoid sticking. 7. Ease your larger pastry circles into the pre-greased tin. Add around 1.5 tsp of mincemeat filling into the centres of each pie. Don’t overfill or your filling will likely burst out during baking. 8. Grab a little bowl of water and wet the edges of your pastry base before then taking one of your smaller pastry circles, gently pressing the edges onto the base. Repeat until all of your pies have been assembled. Make sure your lids are stuck on really well or else your lids might pop off during baking! 9. Beat your smaller egg in a separate bowl and use this to egg wash the pies. Cut two little parallel slits into the lids of your pies, be careful not to push your knife into the pies too deeply as you don’t want to pierce the bottoms! 10. Sprinkle the tops of your pies with demerara sugar, if using - I like to be quite generous with my sprinkling!
