@jessicagresty: Cake *1/2 cup sugar * 1/2 cup liquid sweetener (I used brown rice syrup) * 1 tsp vanilla * 1 cup thick soy yoghurt * 1.5 cups self raising flour * 1/4 cup rolled oats * Pinch of salt * 2 tbs instant coffee granules, dissolved in 2-3 tbs water * 50g Dark chocolate shavings Icing * 1/3 cup plain thick soy yoghurt * 50g dark chocolate shavings * 2-4 tbs icing sugar or liquid sweetener of choice Method Cake. Combine dry ingredients. Stir in wet ingredients until well combined. Pour batter into a lined tin. Bake for 35-40 mins @180C. Icing. Combine ingredients. Chill. Pour over cake once it has cooled down.
