@prettyinthepines: Making one of my favorite fall salads today using @Earthbound Farm organic baby arugula & baby kale, butternut squash, apples and more fall ingredients that I’ll include below! It brings me so much joy to slow down and make a meal like this with organic ingredients knowing I'm fueling my body with the best! Ingredients- For the DRESSING: Olive Oil (¼ cup) Dijon Mustard (2 tsp) Apple Cider Vinegar (2 tbsp) Honey (1 tbsp) Garlic (½ clove minced) For the SALAD: Baby Kale and Arugula (I used about 1.5 cups each) Rice (1 cup) Butternut squash (2 cups) roasted for 25 mins at 425 degrees F. Apple Slices (2 cups) Dried cranberries (¼ cup) Pumpkin seeds or sunflower seeds (¼ cup) Goat cheese (¼ cup) #EarthboundFarm #OrganicMonth #ad
