@geris.kitchen: Spaghetti Pomodoro 🍝 So easy and so delicious using only fresh ingredients. Ingredients: 6 fresh ripe plum tomatoes 4-5 garlic cloves 1/2 white onion 3 tbsp pure extra virgin olive oil Handful fresh basil Salt and pepper to taste 1/4 cup freshly grated Parmigiano Reggiano 150g Spaghetti Method: 1. Bring a pot of water to the boil and remove from heat. Put the plum tomatoes in the water and set aside for ten minutes. 2. Remove tomatoes and place into ice bath. Peel and dice. 3. Finley chop the onion and garlic. Heat up the oil in a sauce pan and add the onion. Cook for a few minutes then add the garlic. 4. Sauté until the onion and garlic are soft. 5. Add in the tomatoes, salt and pepper. Cook for 5 minutes over medium heat. 6. Add in the basil leaves, keep some aside for garnish. 7. Cover with a lid and lower the heat to a simmer until tomatoes are cooked and soft. Around 20mins. 8. When the sauce is almost done, boil a pot of salted water and cook the spaghetti. 9. 2 mins before the spaghetti is ready, drain and add the it to the sauce with a little pasta water. Mix well and cook together for couple of minutes until the spaghetti is cooked to your liking. 10. Serve with fresh Parmigiano Reggiano more basil leaves and some extra black pepper. 11.
