This is the best of summer - crunchy cucumbers, super fresh bursts of flavors from herbs, some creamy avocado, crunchy roasted walnuts, and of course, some nice and warm halloumi cheese to bring it all together. You’ve got to give this a try at your next dinner. . It is SO easy and SO good. . Here is how to make it: . 1.Grab 5-6 Persian cucumbers. Cut them down the middle, then cut them in thin half moon. I find this size works best for me, but go ahead and cut them however way you like. Add to a salad bowl. . 2.Grab a large handful of fresh herbs. I find the combination of lemon basil, tarragon, chive, and mint to work best for this recipe. Any ratio of these work. Finely chop them and add to the salad bowl. Do not substitute in dry herbs for fresh for this recipe - the fresh herbs are key . 3.Cut a large avocado in small chunks and add to the bowl. . 4.Grab 1/3 to 1/2 cup toasted and cooled walnuts, roughly chop, and add it to the bowl. . 5.Add the zest of 1 large lemon, the juice of the lemon, 2-3 tablespoons of a GOOD olive oil, a couple pinches salt, fresh cracked pepper, and optional, some sesame seeds. . 6.Give it a toss, adjust as you like, and as the last step, add your halloumi cheese. . 7.To make the halloumi, just cut it into slices with a knife, spray a pan with avocado oil, bring it to medium heat, flip when golden brown, about 1-2 mins per side. . 8.Top with some fresh lemon juice, some Aleppo pepper, and anything else you like. .
