This hashbrown cottage pie is perfect for cosy evenings in watching a film- and I don’t want to hear any criticism for my love of pride and prejudice ok?? The girls that get it, get it. Though I would like to hear your autumn film recommendations? You need: - 1/2 onion - 1/2 carrot - Olive oil - 1 clove garlic - 1 tbsp tomato puree - 50ml red wine - 1/2 tsp mixed herbs - 2 1/2 tsp gravy granules + 225ml water - 100g mince - 50g frozen peas - 1 tsp soy sauce - Salt and pepper - 3-4 hashbrowns Start by preheating your oven to 190ºC then finely dicing your onions and carrots and sautéing in a drizzle of olive oil until soft. When soft, finely chop your garlic and add that in along with the tomato puree. Let that cook for a few minutes then deglaze the pan with the red wine and let that cook off for another 3 minutes. Add in the herbs, gravy, water, mince, frozen peas and soy sauce, give everything a mix and simmer for 10 minutes. Taste and season generously with salt and pepper. Place 3 or 4 hashbrowns on top of the mince then place in the oven and cook for 30 minutes, or until golden.
