wouldn’t it be easier to back up all these things to icloud and then mark your phone as lost (you can log into your icloud from someone’s phone to do that) so no one has access to anything???

Lock your sim!! You can do it on every phone and it means once the phone dies/turns off no one can access your sim information without a password!
