@cookinginthemidwest: These Smoked Cheesy Funeral Potatoes are the perfect side dish for any family get together! Recipe 2 lb bag of frozen southern style/diced hash browns 16 oz of sour cream 1 can of cream of chicken 1 stick of melted butter 2 cups of shredded cheddar cheese Salt, pepper, garlic powder 2 cups of crushed corn flakes 6 TBSP of melted butter Steps Spray a 9x13 smoker safe dish with cooking spray. Combine diced hash browns, sour cream, cream of chicken, 1 stick of melted butter, 1 cup of shredded cheddar cheese, and some salt, peppers and garlic powder. Mix together well and spread out evenly in the pan. Top with 1 more cup of shredded cheddar cheese. Crush about 2 cups of corn flakes and spread over potatoes. Pour 6 TBSP of butter over the top. Smoke at 300 degrees for 1 hour. Turn the smoker up to 350 and continue cooking for 20-30 minutes or until potatoes are cooked through. Oven directions- Bake at 350 degrees for about an hour or until potatoes are cooked through and tender. *this can be prepped ahead of time—just wait to top with the cornflakes & butter until right before you bake it!
