@_noregrettispaghetti: How I use up leftover pasta - rose pasta with sausage and harissa! Using leftover lasagne sheets that I dried. I get asked what I do with my leftover pasta a lot and this is one way. I try to cook what I make fresh but when I do have extra - and especially with thinner/flatter shapes or strands - I like to dry them over 24-48 hours at room temp and then store in my pantry for up to 3 months. Lasagne sheets are perfect for turning into a sort of mandilli de saea / maltagliati hybrid 👌🏻 Here’s the recipe for one: Pasta of your choice EVOO 1/2 a small red onion (or 1/4 large) diced 1-2 cloves garlic, sliced Splash of white wine or chicken stock 1 sausage link, meat removed from casing 1 tbsp harissa paste 60ml cream Parmigiano to serve Heat olive oil and sauté onion for a few min before adding the garlic. Once fragrant, add the sausage and break it up with a spoon or a whisk - cook until nicely browned. Deglaze with wine/stock then add the harissa - let that sauté gently while you cook the pasta. Add cream to the sauce, followed by the cooked pasta and some pasta water. Serve with Parmigiano and a drizzle of olive oil! Enjoy 🤍 #fyp #pasta #FoodTok #rosepasta #pastafresca
