Postpartum Panjiri — a traditional bowl of nourishment, warmth & comfort 🤍✨ Ingredients: * Sooji — 75 g * Desi ghee — 180–200 g * Gond (edible gum) — 40 g * Almonds — 50 g * Cashews — 40 g * Pistachios — 30 g * Coconut, desiccated — 40 g * Makhana — 30 g * Melon seeds (char magaz) — 25 g * Pumpkin seeds — 20 g * Roasted Chana 50g * Flaxseeds — 15 g * Raisins — 25 g * Cardamom powder — 1 tsp * Kamar kas — ½ tsp * Cinnamon powder — ½ tsp * Brown sugar or jaggery — 150–175 g, according to taste 👩‍🍳 Method 1. Heat ghee and fry the gond until it puffs up. Remove and crush. 2. In the same pan, lightly roast the almonds, cashews, pistachios, makhana and seeds separately. 3. Add a little more ghee if needed and roast a sooji on low heat until golden and aromatic. 4. Add coconut, raisins, crushed gond and roasted nuts/seeds. 5. Mix in cardamom, kamar kas and jaggery 6.
