@sooziethefoodie: After looking for these for over a year I finally got water caltrops again! These are definitely the spookiest nuts I have ever seen! What makes water caltrops so cool (asides from their appearance) is that they grow submerged underwater and their plant grows above the water! To me water caltrops look like a mix of a gargoyle and a bat! These are edible, but they need to be boiled for 30 minutes. Due to the fact that water caltrops grow underwater, they do tend to have a bit of a swampy smell and taste. The texture I would compared to a mix of a potato and a water chestnut. Last time I made water caltrops I had a really hard time getting the center out of the shell. This time to help soften the center and to give better flavor I did toss these in a sauce! I kept it simple and made a sauce using butter, chili oil, green onions and MSG! Not only did this add a little bit of needed flavor. This made the center come out so much easier!! Thanks to my carving tools and a little bit of trail and error I ended up figuring out how to extract the edible part perfectly!
