I find slurry the easiest. If I'm lazy I just sift some cornstarch into the sauce wile vigorously whisking.

1. In Hungary there is a 4th way to do it called 'habarás' in eng thickening. It is similar to slurry but we use flour with milk, water or sour cream.

You can also use egg yolks which most people will have eggs. yolks are an emulsifier and add a nice umami to a dish.

In my country for roux we fry the flour in the fat low and slow and once it's nicely toasted we add it to the sauce.
