@dollartreedinners: One Pan Cheesy Smoked Sausage and Rice Skillet Slice smoked sausage into rounds, dice an onion and/or bell pepper if desired. Fry sausage and onions in a skillet on medium high heat with vegetable oil until brown. Add 1 teaspoon of cajun seasoning (store bought, if you have a safe gluten free brand, or make your own, my recipe is below) and 1 cup of white rice. Fry together until the rice is toasted, approximately 3 to 5 minutes. Add 1 can of diced tomatoes and 1 & 1/2 cups of gluten free chicken broth. Bring to a boil, then cover and simmer for 15 minutes. Turn off the heat and let it rest for 15 minutes undisturbed.
