@fatimahomran: Maybe I’m just tired of the million hours a week I used to do in the workplace…. Homemade Chicken Shawarma is unbelievably good, especially when it’s teamed up with thick creamy garlic and tahini dressing. Recipe ⬇️ Marinade 1kg chicken thighs sliced thinly 1/2 cup greek yoghurt 1 lemon squeezed 3tbsp @Soussan Roast Chicken Spice 1/3 cup Olive oil 10 garlic cloves 1tsp Cinnamon 2tbsp Capsicum paste Tahini Dressing (combine together) 1/2cup tahini paste 1/2 to 1 whole lemon squeezed. 1/2 cup water 1tsp pomegranate molasses 1tsp vinegar Salt, pepper 1tsp ground cumin (optional) Method Combine all marinade ingredients except the chicken and whizz in a blender till all combined and thin paste. Toss the chicken slices thoroughly in the marinade until all pieces are coated. Cover with cling wrap and refrigerate overnight or at least 4 hours. In a fry pan, heat pan till hot. Add ghee and place marinated chicken pieces in the fry pan. Do NOT mix. Allow to cook until it starts to turn golden then gently flip the pieces so the other side of the chicken can cook well. Do not cover pan and do not over mix. Just allow to cook on medium to high heat. Once the chicken cooks completely, make a space in the middle of the pan and place a small heatproof bowl filled 3/4 with oil and toss a lighten piece of charcoal inside and cover the pan immediately so the chicken can absorb the smokiness flavour. Brush Lebanese bread or Sajj bread with garlic paste, tahini dressing, pickles and chicken pieces. Roll up, and coat the sandwich with the left over ghee from the chicken and fry the sandwiches lightly till crispy on both sides. Enjoy! #cooking #chicken #shawarma #garlic #food
