@dinnerswithdave: Whole Roasted Fish in Chermoula: A Classic Moroccan Recipe Ingredients 2 whole fish 1.5 to 2lbs each, cleaned 1/3 cup fresh parsley, finely chopped 1/3 cup fresh cilantro, finely chopped 5 cloves garlic, minced 1T paprika 2t ground cumin 1/2 tsp black pepper 1/2 tsp salt 1/4c fresh lemon juice 6T olive oil 1 small or 1/2 large @Mina preserved lemon, rinsed and chopped (rind and pulp) 1.5t Mina spicy harissa 1T tomato paste 3 medium potatoes, peeled and sliced into 1/4” rounds 3-4 carrots, peeled and sliced in 1/4” rounds 2 bell peppers, cut into rings 1 lemon, thinly sliced 2 tomatoes, sliced (optional) 12 Mina Moroccan purple or green olives Instructions Chermoula (marinade) can be made using a mortal and pestle or in a a food processor. Mash or blend garlic, salt, parsley, cilantro, paprika, cumin, black pepper, lemon juice, olive oil, preserved lemon, harissa and tomato paste until well combined. Consistency should be that of a thin paste. Adjust taste based on your preference. Set aside. Score fish by making several deep cuts in the flesh about 1.5” apart on each both sides of the fish. Rub a generous amount of chermoula inside and outside of the fish. Cover, refrigerate for at least 2 hours. Reserve remaining chermoula. When you’re ready to bake the fish, thin the reserved chermoula with a few tablespoons of water. Toss all vegetables in several tablespoons of chermoula and then arrange to your liking in a baking dish large enough to hold the fish. Place fish on top of vegetables and top with any remaining chermoula. Add olives and lay lemon slices across the fish. Drizzle with olive oil. Bake covered at 375 for 30 minutes. Uncover and increase oven temperature to 400 degrees. Continue to bake until fish is flaky, vegetables are cooked and nicely browned. It took an hour of cooking time in total for mine to be done.
