I love making a big big of soul to enjoy throughout the week as an easy healthy dinner! Recipe: Serves 6 Ingredients: - 1 1/2 cups pumpkin purée - 1 1/2 cups chickpeas - 1 1/2 cups diced tomatoes - 1 cup tomato sauce - 3-4 cups water or veggie broth - 4 carrots - 1 can of full fat coconut cream - 1 small sweet potato diced - 2 medium yellow onions diced - 2 garlic cloves minced - 2 tbsp curry spice mix - 1 tsp garlic powder - 2 tbsp avocado oil - Salt & pepper to taste - Optional: parsley to garnish - Optional: naan bread or rice to serve with Directions: 1. Start by adding the avocado oil to a sauce pot on medium heat. Add in the diced onion, minced garlic cloves, and spices to the pot. Sauté for a few minutes. 2. Add in the rest of the ingredients to the pot. Bring to a boil and then simmer until the veggies are cooked through. Optional: blend hall if the mixture in a blender (or use an immersion stick blender) and then pour it back into the soup. 3.
