Dice onion and bell pepper. Chop cilantro and mince garlic. ⁣ 2. Add oil to a pot and heat over medium heat. ⁣ 3. Add in onion, bell pepper, cilantro and salt+pepper. Sauté for around 4 mins.⁣ 4. Add in garlic and tomato paste. Sauté for 2 mins.⁣ 5. Add in seasoning mix and chick’n base. Sauté for another minute.⁣ 6. Pour in black beans and water.  Mix until evenly distributed.⁣ 7. Bring mixture to a boil, then reduce to medium heat. Allow mixture to cook uncovered for around 30 mins (If still cooking other sides after 30 mins, reduce heat to low until ready to eat). ⁣ 8. Preheat oven to 350F⁣ 2. Dice onion and mince garlic. Cut stem off jalapeño then slice jalapeño in half.⁣ 3. Rinse rice in a bowl with cold water until water runs clear. Drain water and set rice aside. ⁣ 4. Pour oil into a large pan and heat over medium heat. ⁣ 5. Once hot, add in rice and sauté for 5 mins (stirring almost constantly so rice doesn’t burn).⁣ 6. Add in onion and sauté for another 7-9 mins or until rice is golden brown. ⁣ 7. Add in garlic, chick’n base and seasonings. Sauté for about 1 min. ⁣ 8. Add in tomato sauce and tomato paste. Sauté for another 2 mins. ⁣ 9. Mix in water and taste broth to determine how much salt to add (I used around 3/4-1 tsp. You can also add additional seasonings if you’d like). Mix everything together one last time. ⁣ 10. Add in sliced jalapeño and cilantro.⁣ 11. Bring mixture to a boil and allow it to continue boiling for 1 min. Cover pan with lid and place in oven to bake for 17 mins. 12. Remove pan from oven and DO NOT remove lid to even take a peek at rice. Let the pan sit with lid on, away from heat for 10 mins. ⁣ 13.
