Gently curve or fold the dough over itself slightly to create the layered brioche look, then place on a parchment-lined baking sheet. Repeat with the remaining dough. Cover the shaped rolls and let rise for 30–45 minutes until puffy. Preheat the oven to 350°F (175°C). Whisk together the egg and milk and brush over the tops of the rolls.
