@heresyourbite: I love a classis bolognese but this ‘Nduja version definitely takes things up a notch 🔥🍝🌶️ Spicy lovers, this one’s for you! #heresyourbite 1 lb. cooked Pappardelle pasta, al dente 1 cup reserved pasta water 1 T Tony’s seasoning 2 T olive oil 1 lb. lean ground beef ½ lb. ground pork 6 oz. ‘Nduja sausage 1 yellow onion, diced 2 carrots peeled, diced 2 stalks celery, diced 8 cloves garlic, minced 1 cup dry red wine 28 oz. crushed tomatoes 3 T tomato paste 1 T balsamic vinegar ⅔ cup beef broth 1 T dried parsley 1 t dried oregano 1 t sugar ½ t dried thyme ¼ t crushed red pepper (to taste, the ‘nduja is already spicy) ¼ cup heavy cream ⅓ cup chopped fresh basil Parmesan rind (if you have it on hand) Fresh basil and grated parmesan to garnish 1. In a large dutch oven or saucepan, heat your olive oil over medium heat. Add in your onion, celery, and carrot. Cook until translucent, about 5-6 minutes. 2. Add in your ground beef, pork, and ‘nduja. Cook through. Add garlic and cook for about 30 more seconds, or until fragrant. 3. Pour in your wine and stir together. Reduce heat and simmer for about 20 minutes, stirring frequently. 4. Add in the remainder of your ingredients, aside from the fresh basil and heavy cream, and stir to combine. Scrape the bottom of your pan with a wooden spoon to release all of those flavorful brown bits. Simmer, uncovered for 2-3 hours. Stirring occasionally. 5. Once finished, add in your heavy cream and fresh basil. Stir and cook on low for another 10 minutes. (Remove parmesan rind once finished, if using) 6. Add your cooked pasta directly into the sauce along with ½-1 cup pasta water. Stir and simmer for another 2-3 minutes. 7. Top with plenty of freshly grated parmesan and fresh basil.
