Chicken & Vegetable Stew Packed with flavour and loaded with goodness, this chicken and vegetable stew is the ultimate comfort food fix to warm you up on a cold day. Serves 4-6 Ingredients 400g Chicken ( 2 Tbsp Cornflour 25 g Butter 4 Tbsp Oil 1 Large Onion (Diced) 1 Leek (Sliced) 2 Carrots (Diced) 2 Celery Sticks (Chopped) 2 Parsnips (Diced) ½ Swede (Diced) 1 Tbsp Tomato Puree 1 Tbsp Garlic (Minced) 1 Tbsp (Mixed Herbs) 1 Tsp Salt 1 Tsp Pepper 1 Tbsp Cornflour 800g Potatoes (Chopped) 1 Litre Chicken Stock (2 Cubes) 2 Sprigs Thyme 2 Bay Leaves Fresh Parsley   Method 2 / 2 Roughly chop all veggies to equal size (about 1-2 cm thick). Coat the chicken with 2 tablespoons of cornflour and fry in a deep pan on a medium high heat with butter and oil until golden, then set aside. In the same pan add the onion, leek, carrots, celery, parsnips and swede. Mix frequently for around 10-12 minutes until they begin to soften slightly. Then add tomato, puree, garlic, mixed herbs, salt and pepper mixing through. Return the chicken back to the pan then add another tablespoon of cornflour and mix through. Add chopped potatoes (approx 1 inch in size) and mix through. Then add chicken stock followed by thyme and bay leaves. Then cover on a low heat for around 40-45 minutes then remove the lid and simmer for a further 15-20 minutes or until the sauce has thickened and everything is nicely softened. Then add some fresh parsley and that’s dinner sorted! Perfect in a bowl with some crusty bread. Enjoy! #chicken #stew #soup
