@dansfoodforthought: Grilled Chicken Sandwich ft. the all new Weber Q+ Premium Gas Barbecue @WeberBBQAusNZ Ingredients: 8 chicken thighs bone removed skin-on Marinade Ingredients 3 spring onions cut in batons 2 shallots, chopped 3-4 Scotch bonnet chili peppers, stems removed, or habaneros 2 inch piece fresh ginger, peeled & chopped 6 garlic cloves 1 tbsp dried thyme 1/2 tsp nutmeg 1 tsp ground allspice 2 tbsp soy sauce 2 tbsp brown sugar 1 tbsp salt 2 tbsp soy sauce 1 tsp salt 1 tbsp smoked paprika 1 tbsp honey 2 tbsp olive oil Juice of 1 lime Juice of 1/2 orange Slaw 1/4 White cabbage 1/4 purple cabbage 1/2 large carrot julienned 1 tbsp Spring onion greens Pinch of salt 1 tsp apple cider vinegar Drizzle of olive oil Coriander Line Mayo 1/2 cup mayo 1 bunch of coriander Juice from 1/2 lime 1/2 tsp cracker pepper 1 garlic clove minced 4 brioche buns 4 slices of pineapple Coriander Method: Marinade: In a food processor, combine all marinade ingredients & blend until smooth Place the chicken thighs in a zip lock bag & pour the marinade over them. Make sure the chicken is well coated with the marinade. Refrigerate for at least 4 hours or overnight for best results. Preheat your BBQ Remove the chicken from the marinade and shake off any excess. Grill the chicken thighs for about 5-7 minutes on each side or until they are cooked through & have a nice char. While grilling the chicken, also grill the pineapple slices until they have grill marks, about 3 mins per side. Coleslaw: In a bowl, combine both cabbages, julienned carrot, spring onion greens, a pinch of salt, apple cider vinegar & a drizzle of olive oil. Toss everything together until well combined. Coriander Lime Mayo: In a food processor, blend together the mayo, fresh coriander, lime juice, cracked pepper and minced garlic Assembly: Toast the brioche buns on the grill until they are lightly browned. Spread a generous amount of the coriander lime mayo on the inside of each bun. Place a grilled chicken thigh on the bottom of the bun Top the chicken with a grilled pineapple slice and a handful of coleslaw.
