I call this the โsourdough initiationโ because we would go through the process step-by-step. It is the most basic framework that had helped me when I first started making sourdough. As a beginner the guidelines were concise and there was not much guesswork involved and Iโm the sort who finds comfort in structure and routine, so it worked well for me. And that I think, is the greatest beauty of breadmaking ๐ฅฐ๐ฅฐ ๐น๐๐ค๐๐ ๐๐ ๐ฆ๐ฃ๐๐ ๐ฆ๐๐ โ๐ฃ๐ ๐๐๐ค๐ค Autolyse โฌ๏ธ Add levain โฌ๏ธ Add salt โฌ๏ธ Stretch & Fold โฌ๏ธ Lamination โฌ๏ธ Coil folds โฌ๏ธ Shaping โฌ๏ธ Cold retard โฌ๏ธ Bake Today we will cover the first 3 steps. Step 1 is autolysis, which is simply the mixing of ๐ฆ and flour together and letting it sit. This allows the flour to be fully hydrated and gluten bonds will start to develop with no effort on our part ๐ Step 2 is adding your starter to the mixture in step 1 and that would be the start of bulk fermentation. Step 3 is adding salt. With๐ง, the gluten will start to tighten which makes the dough stronger to get ready for the rest of the process. At the end of step 3, we should get a nice cohesive dough that is smooth and does not stick to our slightly wet hand.
