Makes 1 egg coffee 1 egg yolk 1 tablespoon condensed milk 2 tablespoons Robusta coffee grounds 1 cup boiling water, plus more for cooking Make the coffee by placing the grounds into a phin filter cup fitted over a coffee cup. Lightly shake it to even out the grounds before you place the gravity press. Pour 3 to 4 tablespoons boiling water over the grounds to wet them. Wait 30 seconds for it to filter down, then fill the phin filter cup to the top with boiling water, it is usually around ⅓ cup. Cover with the lid and let it slowly drip for 3 to 4 minutes. If you don’t have a phin filter, any espresso maker should work. You need to make ½ cup of espresso and pour it into a coffee cup. Heat a small pot of water over medium heat, bring it to a barely a simmer. Combine 1 egg yolk and the condensed milk together in a small heat-safe bowl. Place the bowl over the hot water for 10 second increments. Whisk vigorously on and off the heat until the egg mixture doubles in volume with an airy texture and light yellow color, about 2 to 3 minutes.
