@dansfoodforthought: Steak & Chimichurri Sandwich ft. the @WeberBBQAusNZ Q+ BBQ Ingredients: 250-300g Skirt steak 1/3 cup olive oil 2 tbsp light soy sauce 1 tbsp dijon mustard ¼ cup red wine vinegar Pinch of salt 2 tbsp Weber steak seasoning 1 red capsicum (sliced) 1 white onion (sliced) Swiss cheese slices Ciabatta rolls Chimichurri Sauce: 1 bunch of flat-leaf parsley (chopped) 2 tbsp fresh oregano (chopped) 2 tbsp red wine vinegar ½ cup olive oil Pinch of salt ⅓ white onion (finely diced) 2 small chillis or 1 large chilli (deseeded, serrano, cayenne) A few twists of cracked black pepper 1 clove of garlic (minced) Method: In a bowl, whisk together olive oil, soy sauce, dijon mustard,cup red wine vinegar, salt, & Weber steak seasoning. Place the skirt steak in a shallow dish, & pour the marinade over the steak. Cover & marinate in the refrigerator for at least 30 minutes. In a bowl, combine the chopped parsley, oregano, minced garlic, diced white onion, & chilli. Add red wine vinegar, olive oil, a pinch of salt, & cracked black pepper. Mix well, cover, & let the flavours come together while you prepare the rest of the sandwich Preheat your Weber BBQ for 15 minutes Remove the steak from the marinade and grill for about 2-3 minutes per side on high heat or adjust the time to your desired doneness. Or until internal temp hit 54 degrees (Medium Rare) Once cooked, transfer the steak to a cutting board and let it rest for a few minutes. While the steak rests, grill the sliced red capsicum and white onion until they're slightly softened and caramelised Slice the ciabatta rolls in half, and lightly toast them on the grill. When they come off the grill slice a garlic clove in half then rub onto the base of the bread for some flavour. Slice the grilled steak thinly against the grain & place it on top of the ciabatta roll Add the grilled red capsicum and onion slices on top of the steak. Layer Swiss cheese on-top of the veggies then place under a grill to melt or use a blowtorch Once melted drizzle a generous amount of chimichurri sauce over the ingredients.
