@asipoftexas: Creamy Pumpkin and Sausage Pasta Ingredients: 1 pound pasta (rigatoni or your choice) 1 shallot, finely chopped 3 cloves garlic, minced Salt, to taste Chili flakes (as desired) 1 can of pumpkin puree 1/2 cup heavy cream 1 to 1.5 cups reserved pasta water (adjust for desired consistency) 1 pound sausage Freshly grated Parmesan cheese Fresh sage leaves Instructions: 🎃Cook the pasta in a large pot of salted boiling water according to the package instructions until al dente. Reserve some pasta water before draining. Set aside. 🎃In a large skillet, heat a bit of olive oil over medium heat. Add the sausage and cook until it’s browned and cooked through. Remove the sausage from the pan and place it on a plate lined with paper towels to absorb excess oil and fat. 🎃In the same skillet, add a bit more olive oil if needed.
