Choripollo Quesadillas & Rice These choripollo quesadillas are LOADED 🤤 with chicken + chorizo + melty cheese with the best homemade Mexican rice.  Ingredients For the rice ½ onion, diced 2 cups white rice 2 cups water 2 cups chicken broth 1 (8 oz) can tomato sauce ½ can petite diced tomatoes 2 spoonfuls Knorr chicken bouillon, about 1½ tablespoons total, add to taste Oil, for sautéing For the quesadillas 6–8 taco-size flour tortillas 2 sticks chorizo 1 lb chicken breast, diced into small pieces 1 teaspoon each salt, onion powder, and garlic powder ½ teaspoon each cumin and black pepper Quesadilla melting cheese @LaChonaUS  Butter, for toasting Directions 1. Make the rice:
Heat a little oil in a large skillet over medium heat. Add the diced onion and rice. Cook for a few minutes, stirring often, until the onion softens and the rice is lightly golden and fragrant. 2. Add the liquid:
Stir in the water, chicken broth, tomato sauce, and diced tomatoes. Add the chicken bouillon one spoonful at a time, tasting as you go, until the flavor is where you want it. 3. Cook the rice:
Bring everything to a boil, then reduce the heat to low-medium. Cover and let it simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed. Let it rest for 10 minutes before fluffing with a fork. 4. Cook the chicken and chorizo:
In a separate skillet, cook the chorizo over medium heat, breaking it up as it cooks. Once mostly cooked, add the diced chicken and season with salt, onion powder, garlic powder, cumin, and black pepper. Cook until the chicken is fully cooked through and the chorizo is browned. Remove from the skillet and set aside.  5. Assemble the quesadillas:
Layer the tortillas with cheese, some of the chicken and chorizo mixture, and more quesadilla cheese. Fold the tortillas over. 6. Toast the quesadillas:
Melt a little butter in a skillet over medium heat. Cook the quesadillas for 2–3 minutes per side, or until golden brown and crispy on the outside and the cheese is melted. 7. Serve:
Serve the choripollo quesadillas hot with the rice on the side.
