Wrote it out: Heat oil, add 2 cinnamon sticks, 5 cardamoms and 2 bay leaves. Add 3 diced onions, along with garlic, ginger and salt. Cook until soft and then add in 1kg lamb. Cook for 30 mins until brown and then add in 3 plum tomatoes (1/2 tin). Cook for 10 mins and then add spices: 1 tsp turmeric, 1 tsp coriander, 1 tsp cumin, 1 tsp garam masala, 1 tsp madras curry powder, 2 tsp chilli powder and 2 tsp kashmiri chilli powder. Add some hot water. Cover and cook until lamb is tender. Finish off with 1 tsp fenugreek leaves, lemon juice and cilantro.
