CRISPY SMASHED POTATOES have my heart. Ingredients: 1 1.5 lb bag of baby gold potatoes Olive oil cooking spray Salt 1 tsp garlic powder 1 tsp onion powder 1 tsp dried rosemary 1 tsp oregano Greek yogurt ranch 1/2 cup nonfat plain Greek yogurt 1-2 tbsp ranch seasoning (adjust according to taste preference) 2 tsp lemon juice 2 tsp dried chives Instructions// 1. Preheat oven to 450 F and line a baking sheet with parchment paper. 2. To a large pot add potatoes and cover with water, then add salt. Bring water to a boil and boil potatoes or until fork tender. 3. When potatoes are done, drain them and pat dry. Add potatoes to the baking sheet and use a cup with a flat bottom to smash the potatoes. Spray generously with cooking spray then add all your seasonings. 4. Place in the oven and cook for 25-30 minutes or until golden and crispy. 5. Whisk together ranch ingredients, starting with only 1 tbsp of ranch seasoning and add more according to taste preference.
