@katerynascafe: Loaded Tuna Toast This may not be the prettiest of my toasts, but trust me when I say - it's an easy, fresh, delicious and totally satisfying lunch option, that comes together in just 5 minutes! Ingredients 1 5oz tin tuna in water, drained 1 tbsp plain Greek yogurt 1 tsp dijon mustard 1 celery stalk, diced 1 tbsp finely chopped red pickled onion 1 tbsp, dill, chopped Salt, pepper to taste Mashed avocado, fresh cucumber slices, red pepper flakes and chopped chives to serve. Combine the tuna, Greek yogurt, dijon mustard, celery, pickled onion, and dill in a small bowl. Season with salt and black pepper and mix until combined. Top a piece of toasted bread with mashed avocado, cucumber slices and tuna mix. Garnish with red pepper flakes and chopped chives. Enjoy!
