These candied cranberries by @ERICA & MORGAN are everywhere right now for a reason. 👏 They are a little tart and sweet, crunchy on the outside, and honestly addictive. I followed their original method using apple cider and Sprite Zero to soak the cranberries, then dried and coated them.  Here’s the honest note though: I was trying to keep these somewhat lower carb, so I tested this batch with a powdered sweetener instead of powdered sugar, and I do not recommend going against the original recipe. It technically works, but it does have a cooling affect and the flavor and finish are much better with the original powdered sugar.  Here is how I made them: 1.In a medium bowl, pour in equal parts apple cider (or orange juice) and Sprite Zero or alternative. 2.Wash and thoroughly dry 1 bag of cranberries, discarding any soft ones. Add the cranberries, cover, and refrigerate overnight or upto 24 hrs. 3.  Strain the cranberries and transfer to a clean bowl. 4. Add a generous amount of powdered sugar (1 bag) and toss until every cranberry is fully coated. If sticky, add more powdered sugar. Mine weren’t as coated as they needed to be, again, I used a powered sweetner which I don’t recommend, which probably cause it! 5.   Preheat the oven to 200°F. 6. Spread cranberries on a parchment-lined sheet pan and bake for just 5 minutes to help dry the coating. 7.  Let them sit at room temperature for a few hours to fully dry, but go ahead and sneak a couple in while you wait 8.   Store in an airtight container in the fridge.
