@_wellwithkell: cheesy chicken meatballs 🍗🧀 they’re so delish and can be served alongside of almost anything 🧡 Meatballs 🍗 500g lean chicken mince 1 tsp minced garlic 1/2 cup breadcrumbs (I used brown rice breadcrumbs) 1 cup finely chopped baby spinach 1/3 cup grated parmesan cheese Salt and pepper to taste 1/4 cup chopped parsley 2 tbsp olive oil (only 1tbsp in meatballs - see method) “Cheesy” sauce 1 tbsp butter 1 cup full cream milk 1/8 cup nutritional yeast flakes 1/4 tsp paprika 1/2 tsp cumin powder 1/4 tsp sea salt 1 tbsp tapioca flour 2 tbsp hot water Method Preheat oven to 180C. In a bowl combine the ingredients to make the meatballs. Roll into 15 balls and place in a baking tray with remaining 1 tbsp of olive oil. Bake until the tops are very slightly golden. In the meantime make the cheesy sauce. Combine the hot water and tapioca powder in a small bowl. Melt the butter in a saucepan, add in the tapioca mixture and all remaining ingredients and stir over heat to thicken. Remove the meatballs from the oven and pour in the cheese mixture. Cover the meatballs with mozzarella cheese and bake until golden. 🧡🧡
