1 tbsp olive oil 
1 spring onion, finely chopped 
200g bacon, diced 
250g cream cheese,
2/3 cup double cream 
2/3 cup Sour Cream 
1 cup grated cheddar cheese 1 cup grated mozzarella cheese Preheat the oven to 190C fan-forced. Get yourself an oven tray.
Cut a disc off the top of the cob loaf to form a lid. Tear bread from the centre of the loaf, leaving a 2cm edge. Put the pieces to one side.
Heat olive oil in a frying pan over medium heat. Add the bacon and spring onion, once the bacon starts to brown and the onions have softened remove from the heat.
In a bowl add cream cheese, cream, sour cream and stir and then add grated cheese and the bacon and onion mix
Spoon mixture into the loaf. Top with a little grated cheese, add the lid then cover with tin foil and put in the oven for 35 minutes. Remove from the oven and put the tear bread from the inside of the loaf on the tray and back in the oven for 10 minutes.
