Ingredients 7 grams active dry yeast 572 grams bread flour 1/4 cup honey 1 1/4 cup warm milk 2 eggs 1/4 tsp sea salt 1 tsp olive oil Finishing 1 egg 1 tsp milk 2 tbsp melted butter 1 tbsp honey Direction 1. Mix the egg lightly. 2. Add the yeast, milk and honey. Let it proof for 5 minutes. Add in the flour, egg and melted butter. The dough will be sticky and shaggy. 3. Add into a kitchen aid and mix for 10 minutes on a 5. Stretch the dough to test for a window pane. 4. Let the dough rise in an oiled bowl for 90 minutes. 5. Punch the dough down then divide into 82 gram balls. You’ll have 12 pieces. 6. Line the pan with parchment paper. Place your dough on pan, cover and let it rise in the microwave for another 30 mins. 7. Preheat the oven to 375F. Brush the rolls with egg wash and bake for 20 minutes. 8.
