@posspantry: Replying to @An Feta Orzo Pasta Salad 🥗 Ingredients: - ~400g risoni or orzo pasta, cooked Al dente - 2 Lebanese cucumbers, diced. - 2 red capsicums, diced. - 4 chopped spring onions. - 180g feta (yes you read that right). - 1/2 cup chopped dill. - 2 cups chopped baby spinach. - 1/2 cup chopped green olives. - 1/4 cup EVOO. - 1/4 cup balsamic vinegar. - 2 tbsp whole grain mustard. - 1/4 cup fresh grated parmesan. - 1 tbsp dried oregano. - 1/2 tbsp dried thyme. - Salt and pepper to taste (lots of it, start off small taste it, then keep going in increments until it’s perfect!)
