🇵🇰 Charsi Karahi. The only kind of chars I’m addicted to is this one lol. Simple, but full of flavour. Ingredients • Oil • 1kg chicken (with bone is better) • 5–6 large tomatoes • 1 tbsp crushed garlic • 1 tbsp crushed ginger • 1 tbsp black pepper • 1 tsp kalonji seeds • Green bullet chillies • Fresh coriander Method 1️⃣ Heat oil and fry the chicken on medium-high until lightly browned. Remove the chicken once coloured – it cooks fast and you don’t want it turning mushy. 2️⃣ Remove excess oil, leaving a small amount. Add crushed ginger and garlic and fry for 1 minute (do not let it burn). 3️⃣ Add the tomatoes and cook for 5–10 minutes or until soft. Remove the skins, then crush the tomatoes so they combine fully with the masala. 4️⃣ Add the chicken back in and cook for another 5–7 minutes until everything comes together and the oil starts to separate. 5️⃣ Crush the black pepper and kalonji seeds together and add to the karahi (I used around 2–3 tsp total). 6️⃣ Finish with fresh coriander and green bullet chillies.
