@chefthombateman: All about the Potatoes, Part 7. Baked Potato Soup, velvety comforting and delicious. It’s cold outside this is your lunch in waiting. Makes enough for 6. 800g floury potatoes 2 large onions sliced 2 leeks 6 garlic cloves 2 tsp fresh thyme leaves 60g butter 1 litre chicken or veg stock 150-200ml cream Salt/pepper Crispy bacon Crispy onions The green oil I have is made from leek tops 1. Bake the potatoes at 180c/360f for 1 hour 2. Soften the onion, leek and garlic in a pan with some salt then add the thyme 3. Scoop out the cooked potato flesh and add to the vegetable before covering with stock 4. Simmer for 30 mins then add as much cream as you see it 5. Blend with a stick blender or one like I have that doesn’t trap the steam 6. Add cold butter as you blend and season to taste with salt 7. Serve with crusty bread with loads of butter, top the soup with crispy bacon and onion #potato #potatoes #soup
