Zucchini Ris-OAT-o Don’t have Arborio rice in your pantry already? Use oatmeal instead. I promise you, it’ll change your life. I made the homies lunch recently and they were blown away. 1 tbsp olive oil 1 tbsp butter 1 shallot, minced 2 cloves garlic, minced 2 medium zucchini (1.5 shredded, .5 shaved thin with a mandolin) 1 cup oatmeal 1/4 cup white cooking wine 1 3/4 cups chicken stock/broth Salt & pepper 1/2 cup ricotta, plus more to serve 1/2 cup freshly grated parmesan, plus more to serve Red pepper flakes Pesto In a medium or large pot over medium heat, heat olive oil and melt butter. Add shallot and cook for 2-3 minutes, then add garlic and cook for 1 minute. Add zucchini and stir, cooking for 3-4 minutes. Season with salt and pepper.  Meanwhile, in a separate small pot, bring the chicken stock to a simmer. In a separate small bowl, add the thinly shaved zucchini slices with about 1 tbsp olive oil, a pinch of salt and pepper, and red pepper flakes. Set aside. Add in the oatmeal to the pot. Stir to combine with the zucchini. Pour in white cooking wine. Stir and cook for about 2 minutes until alcohol cooks off. Then label in about 1/4 cup of chicken stock at a time, stirring until the oatmeal absorbs most of the liquid. Continue labeling in the chicken stock until the oats are fully cooked and liquid is absorbed. The oatmeal should still be fairly “runny” but not liquid-y. Add in the ricotta and stir.
