My EASY Vodka Pasta 😁🤌 Save the FULL RECIPE Below ⤵️ 📝Sauce Ingredients:  - Thinly sliced Prosciutto, chopped into bits, - Splash extra virgin olive oil, - 2 shallots, finely chopped, - 4 cloves fresh garlic, finely chopped, - Sprinkle of dried chilli flakes, - 1.5 tbsp tomato paste, - 1 1/2 ounces vodka (optional), - 1 full bottle of tomato passata, - Handful fresh Basil leaves, - Pinch of salt and pepper, - 1 dollop/ drizzle of heavy cream, - 3/4 cup Parmigiano Reggiano, grated, 📝 Pasta Dish:  - 400-500 grams Rigatoni or Thick Looped Pasta, - 1 ball Burrata cheese, - 2 tbsp fresh parsley, chopped, - Red pepper flakes, for garnish, - A drizzle of olive oil,  🧑‍🍳 Method: Prepare the Sauce: 1. In a large pan, add chopped prosciutto and cook until brown and crispy. Next, add olive oil followed by some finely chopped shallots. Cook until lightly browned and reduced. 2. Let the pan cool slightly, then add finely chopped garlic and dried chilli flakes. Season with salt & pepper. Mix well. 3. Next, add in tomato paste, mix, then add vodka & cook for 30-60 seconds to let the alcohol evaporate. 4. Pour in tomato passata & mix well. Add in some fresh basil leaves, then bring sauce to a light simmer for 5-7 minutes. Meanwhile, prepare your pasta. 5. Bring a large pot of generously salted water to a boil. Add pasta and cook according to the package instructions. 🧑‍🍳 Finish Sauce & Combine with Pasta: 1. Stir heavy cream into the sauce and simmer on low heat for another 5-7 minutes. Finish with some freshly grated parmesan cheese. 2. Once the pasta is cooked, drain, reserving 1 cup of the pasta cooking water for later. 3. Add the cooked pasta into the pan with the sauce. Then add reserved pasta water as needed to achieve the desired consistency. Finally, adjust seasoning with salt, pepper, a little more parmesan cheese and some chopped parsley.
