STRAWBERRY DUMPLINGS 🍓 Recipe below 👇 I was introduced to strawberry dumplings (jahodové knedlíky) by my aunt, who’s from the Czech Republic. They’re SO delicious and such a fun, unique way to use strawberries!  Our recipe varies a bit from the traditional version. To my understanding, there are several ways to make them, including a yeasted dough or one made with Czech Tvaroh cheese, which can be substituted with Farmers cheese or ricotta.  We opted for a simple version made with ricotta, and we rolled them in a cinnamon sugar mixture. The strawberries get super jammy and delicious, so these almost taste like a fancy jelly donut!  RECIPE:  STRAWBERRY DUMPLINGS  10-16 strawberries (depending on size), hulled 1 cup ricotta (~250g)  1 1/2 cups double zero or all purpose flour  1/4 tsp baking powder 
1/4 tsp salt  1 egg, beaten  For coating: 1/2 cup sugar + 1 1/2 tsp cinnamon  Drain the ricotta: For best results, spread the ricotta into an even layer on top of paper towels. Place more paper towel on top and press down gently. Let sit for 20-30 minutes to drain, then peel off the paper towel. Meanwhile, wash your strawberries and pat as dry as possible. Hull the strawberries and set aside. Bring a pot of water to a simmer.  Add flour, baking powder and salt to a bowl and mix. Add in drained ricotta and egg and start to mix the dough until it forms a shaggy mixture.  Turn the dough out onto a nonstick surface and gently knead into a ball, then roll into a log. Don’t over-work the dough.  Portion the dough into ~1oz pieces, then gently form into a circle that’s big enough to encase the strawberry. Place the strawberry in the center, then wrap the dough around it, pinching the dough to seal.  Place the dumplings in simmering (not boiling) water for 5 minutes, then remove with a slotted spoon and let them dry off for a minute. Mix together the sugar and cinnamon, then roll the dumplings in the mixture and enjoy right away! NOTES: -If your dough is sticky, add extra flour add needed. If it’s too dry, add a small amount of water.  -Roll the dough covered strawberry in your hands to even them out.  -If your strawberries are large, they may need an extra minute of cook time.  -Pat the dumplings dry a bit before rolling in cinnamon sugar.   #strawberry #Summer #Recipe
