@saras_eats_and_sweets: THE BEST COLD AND FLU BUSTING MINESTRONE SOUP 🍲 🤧 Vitamins, minerals and antioxidants, oh, my! This recipe is blue zone inspired and uses range of produce and grains to create something that could only come out of your grandmother’s kitchen (except, now yours too!) Ingredients~ - 1 large onion - 1 head of celery - 8 medium carrots - 1 head of garlic - 6 medium yellow or russet potatoes - 1 cup orzo or pastina - 1 can of beans ( I used garbanzo) - 2 cans of diced tomatoes - 3 bay leaves - Fresh rosemary, thyme and parsley to taste - Salt and pepper to taste - Chicken broth to fully cover all ingredients - Lemon to garshish Directions~ In a large pot, sauté your onions, carrots, and celery until tender. Add in your garlic and cook until fragrant. Combine all remaining ingredients and allow this soup to simmer for 20 to 30 minutes until the flavors have combined. Serve with a squeeze of fresh lemon, and some chopped parsley over top! You can literally feel the soup making you healthier with every bite!
