@feed.annna: Pumpkin cake with cream cheese frosting, walnuts, & figs Ingredients 3 cups all-purpose flour 1 ½ teaspoons baking soda 1 teaspoon salt ¾ cup unsalted butter, softened 1 cup brown sugar ¾ cup granulated sugar 3 large eggs 1 tablespoon vanilla extract 1 (15 oz) can pumpkin purée ¼ cup applesauce 1 cup vanilla Taché milk 2 teaspoon pumpkin spice Frosting 16 ounces cream cheese, room temp 1 cup unsalted butter, room temp 6 cups confectioners sugar 2 teaspoons vanilla extract ¼ teaspoon salt Preparation Preheat oven to 300F. Grease 3 8-in cake pans In one bowl, mix flour, baking soda, salt In KitchenAid stand mixer, cream butter and sugar until light and fluffy. Add 1 egg at a time, stir in vanilla, pumpkin, and applesauce. Beat in flour mixture and milk alternately Divide batter into cake pans. Bake for 30-35 minutes. Let cool in room temp for 15-20 minutes then put in fridge to finish cooling process For frosting: in a stand mixer, beat cream cheese and butter on high until smooth and creamy. Add confectioners sugar, vanilla, and salt.
