This one is officially joining the weeknight dinner rotation. 🍅 Mini Meatball Orecchiette ✨ Ingredients: • 1 lb orecchiette pasta • 1 lb ground beef • 1/4 cup plain breadcrumbs • 1/4 cup chopped fresh parsley • 2 eggs, lightly beaten • 1 tbsp whole milk • 1 tbsp ketchup • 3/4 cup grated Romano cheese • 3/4 tsp salt • 3/4 tsp black pepper • 2–3 tbsp olive oil • 1½ cups hot chicken stock • 4 cups cherry tomatoes, halved • 1/2 cup freshly grated Parmesan • 8 oz fresh mozzarella, torn • 1/2 cup fresh basil, chopped ✨ Directions: Cook the orecchiette in salted water until al dente. Reserve 1 cup of pasta water before draining. In a bowl, mix the breadcrumbs, parsley, eggs, milk, ketchup, Romano, salt, and pepper. Add the ground beef and gently combine. Roll into mini meatballs. Heat the olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides. Add the hot chicken stock and cherry tomatoes. Simmer 5–7 minutes, until the tomatoes burst and the meatballs are cooked through. Toss the hot pasta with Parmesan, adding a splash of reserved pasta water if needed. Fold in the meatballs, tomato sauce, torn fresh mozzarella, and basil. Serve with extra Parmesan and fresh basil on top.
