Fresh cherry tomatoes or 1 can (14 oz) diced tomatoes, drained 1/4 cup bourbon  1 cup lobster or seafood stock (chicken stock can be used as a substitute) 1/2 cup Heavy cream  Fresh chives, chopped Red pepper flakes (to taste) Salt and pepper (to taste) Lemon zest  ❂ Cooking Process:  ⁃ If using a whole lobster, boil it in a large pot of salted water for about 15 minutes. Remove and let it cool, then extract the meat from the claws and tail. Chop the meat into bite-sized pieces.  ⁃ In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside.  ⁃ In a large pan, heat the olive oil and butter over medium heat. Lightly fry the cooked lobster pieces in oil, add lemon zest, then remove from the pan and set aside. In the same pan add garlic and onion, sautéing until the onion is translucent. Add the red pepper flakes, tomatoes then deglaze the pan with bourbon , letting it reduce slightly.Add the stock to the pan. Bring to a simmer and let it cook for about 10 minutes, or until it starts to thicken. Season with salt and pepper.  ⁃ Add the cooked pasta to the pan, tossing it with the sauce until everything is well combined. Add the lobster meat to the sauce and cook for an additional 2-3 minutes.   ⁃ Garnish and Serve: Garnish with fresh chives.
