Pull it off the heat then add cheeses. If it's too hot or the cheese boils, the milk solids separate and make it gritty

Use Dijon mustard not the country Dijon. Country is course ground mustard. The regular is smooth.

cook the butter and flour for a lil longer to cook out the flour taste I doubt the lil bit of mustard even was tasted in there but I did that before

Mississippi kween doesn’t use a roux . She said it’s to grainy also. She uses 4 slices of American cheese and cream cheese.

It’s the roux … you don’t have to make one.. just make a regular cheese sauce without flour and add cream cheese instead of flour
