@saras_eats_and_sweets: SAVE THIS DECADENT ROASTED BUTTERNUT SQUASH, you will not regret it! It is a fiber packed, immune boosting powerhouse that needs to become a staple on your weekly menu! Ingredients~ - 1 whole butternut squash - olive oil - dried or fresh herbs (sage, basil, thyme and rosemary are all wonderful here!) - salt/pepper to taste - Parmesan for topping - Fresh parsley for garnish Directions~ While your oven is preheating to 425°F, peel and dice your butternut squash into even sized cubes. Transfer these to a large baking sheet, ensuring there is room in between individual pieces to prevent steaming from occurring and to allow proper roasting! You definitely want that golden crispy texture on your butternut squash! Add your olive oil, herbs of choice, salt, and then toss to combine. Bake for 35-45 minutes or until you reach your desired texture. I like mine extra crispy and let it go for a bit longer in the oven, turning on the broiler for the last three minutes to really get a deep color and flavor! I like to serve mine with some freshly grated Parmesan and parsley.
