Portion dough into 30g balls using a scale & place in ziplock bags 9. Freeze the dough balls - this lets the flavor develop better & you can bake fresh cookies anytime you want them 10. When ready to bake: preheat oven to 350°F & line baking sheets with parchment paper 11. Place frozen dough balls 2 inches apart on sheets & bake for 11 minutes until edges are golden but centers still gooey 12. SLAM THE TRAY on the counter to flatten & release air for that perfect dense, chewy texture 13.
