Let stand, uncovered, in a warm place until bubbly, about 15 minutes. Then add the flour and salt. Knead the dough either with and or with the mixer on low until a smooth and elastic dough is formed for about 4-5 minutes. Place the dough in a lightly greased large bowl. Cover with a wet towel until doubled in size, about 1 hour. Once the dough rises remove from the bowl and place it on a floured surface.  Divide into 8 equal pieces, and shape into balls. Cover with a towel and let the dough balls rest for 20 minutes in a warm area.  Preheat oven with an empty baking tray inside at 550ºF.  Now flatten out the dough with a rolling pin and let it rise again for 20 minutes by covered with a cloth. Place a parchment paper at the bottom of the tray in the oven Working in batches, place the rolled-out pitas directly on the hot baking sheet. Bake for 2-3 minutes on one side, and then, using a pair of tongs, carefully turn pita over to bake for 1- 2 minute on the other side.  The pita will puff nicely and should be ready. Remove from the oven and cover the baked pitas with a clean towel while you work on the rest of the pitas. For the yogurt sauce: To make the yogurt sauce, combine all the ingredients in the medium bowl and mix. Cover and put in the fridge until needed. For the chicken : Combine the marinade ingredients in a large mixing bowl Marinate the chicken in the spice mix for at least of 1 hour. Preheat the grill to 450 degrees F. Cook the chicken on the preheated grill for 5 minutes per side or until cooked through.  Once cooked cut the chicken into strips and serve warm.
