PESTO GARLIC BREAD (serves 8) Ingredients: 1,12 inch loaf Italian semolina bread 1 cup pesto (recipe below) 1 bulb roasted garlic (optional, recipe below) 2 tbsp butter, room temp 12 ounces ricotta ½ tsp salt Juice of 1 small lemon Zest of 1 small lemon Instruction: -Preheat oven to 350F -Cut the loaf in half lengthwise. -Add the butter and the roasted garlic to the pesto and mix well. -Spread ½ cup of the pesto mixture onto each half. Bake in the oven for 15 minutes. -To blender add the ricotta, salt and juice of 1 lemon, blend on medium-high for 30 seconds. -Top pesto garlic bread with the whipped ricotta and lemon zest. PESTO RECIPE (yields 2 cups) Ingredients: ½ cup pine nuts ¾ cup grated parmigiano reggiano or pecorino Romano 5 ounces (3 ½ cups packed) basil ¾ tsp salt ½ cup extra virgin olive oil Add everything, but the olive oil to a food processor. Start to blend on medium-high and then begin streaming in the olive oil while blending. ROASTED GARLIC Ingredients 1 garlic bulb ½ tbsp olive oil Pinch of salt Preheat oven to 400F. Cut the top off or the garlic bulb so that just the ends of each clove are exposed. Drizzle olive oil over the top, season with salt and wrap in aluminum foil.
